AUTHENTIC AND TRUE POKE
Poke is a quintessential Hawaiian comfort food that harmoniously combines the flavors of land and sea. In earlier years of its history, poke consisted of freshly caught fish cut up into chunks, seasoned with salt, seaweed and kukui nuts.
Over time, the many different cultural influences of the Island adapted poke to their unique tastes, creating the diverse combinations of seafood and flavors you see at poke bars in Hawaii today.

Chefs Lee Anne Wong and Kohei Kishida created our signature poke recipes.
Honolulu Chef, Lee Anne Wong, is a veteran of global cuisine who has previously lent her talents to programs such as ‘Top Chef’ and ‘No Reservations’. She is also behind the iconic Island-style brunch house, Koko Head Café in Hawaii. Chef Lee Anne gained popularity on Top Chef and Iron Chef America and is also an alum of The French Laundry, Nobu and Aquavit.
